Our Chicken Parmesan recipe has our signature kick with tender, breaded chicken made with our Unreal Pepper Rub and Garlic Goodness hot sauce, topped off with your favourite marinara sauce and mozzarella cheese.
We opted to use chicken thighs in our recipe, which lends it a richer flavour, but can easily be swapped out for the traditional chicken breasts!
You can also serve it with a Spring mix salad with a dressing featuring our FireCandy Curry Hot Sauce.

Ingredients

½ cup buttermilk

5-6 chicken thighs

1-2 cups Panko breadcrumbs

3 tbsp Unreal Pepper Rub

Directions
Combine buttermilk, Garlic Goodness, oregano, basil, cumin and salt + pepper in a bowl.
Pat chicken dry with paper towel, then add to a large freezer bag or airtight container.
Pour marinade over chicken, seal container and mix to ensure all chicken is covered in marinade. Refrigerate for at least 30mins, or up to 24 hours.
To a shallow dish add breadcrumbs, Unreal Pepper Rub and salt and pepper. Mix to combine.
One piece at a time, remove chicken from container and place directly into the breadcrumb mixture. Press down to ensure crumbs stick to chicken. Repeat on the other side. Sprinkle extra breadcrumbs over the top to ensure full coverage. Add extra breadcrumbs and rub if required.
Once all chicken thighs have been breaded, heat a large pan and oil over medium-high heat. When pan is hot add chicken and cook 1-2 minutes per side, until slightly golden brown. Transfer to a parchment lined baking sheet.
To each piece of chicken, add marinara sauce, mozzarella, and parmesan in desired amounts. Place in a 450-degree oven for 8-10 minutes, until cooked through and cheese has started to bubble and brown.
Remove chicken from oven and let rest.
To a large bowl combine olive oil, balsamic vinegar, Candied Curry, sugar and salt + pepper. Whisk to combine. To the vinaigrette, add spring mix, cucumbers, tomatoes, and any other salad ingredients you like. Mix to coat.
Divide salad between plates, and top with desired amount of crispy onions.
Plate chicken alongside salad and serve.
