Ingredients
-
1 small red onion, diced (approximately 1 cup)
-
2 tsp oil
-
2 tbsp Maritime Madness Candied Blueberry Hot Sauce
-
1 (227 g) tub of soft cream cheese
-
1/4 cup pomegranate juice
-
1 cup frozen PEI blueberries
-
1 (19 oz) can of black beans, drained and rinsed
-
1 1/2 cups old cheddar cheese
-
1/4 cup cilantro, roughly chopped
-
Black pepper & sea salt
-
Tortilla chips
Directions
Preheat the oven to 400°F.
In a cast iron pan or oven-safe frying pan, add the oil, onion, and Candied Blueberry Hot Sauce. Sauté the onion until soft.
Next, add the cream cheese to the centre of the pan, pour in the pomegranate juice, and fold the blueberries into the cream cheese.
Place the black beans around the outside of the pan, surrounding the cream cheese mixture.
Top with cheese and bake in the oven for 15-20 minutes until it’s bubbling.
Remove the pan from the oven and sprinkle with salt and pepper.
Add a generous drizzle of Candied Blueberry Hot Sauce (don’t worry, it’s mild) and top with cilantro.
Serve with tortilla chips and enjoy.
